Hey guys and dolls,
Just because you are following a low carb diet does not mean you can't eat well without potatoes and bread and such...
I won't lie, I miss potatoes...but sometimes a little substitute works well.
Enter: cauliflower!!
Here is a simple recipe for my famous, or soon to be famous, cauliflower casserole.
It is super easy to make. All you need is:
1 cauliflower (duh)
1/2 an onion diced (yeah, I'm not a huge fan of onions but I promise it will taste delish!)
1 clove of garlic...or two...or three
1 package cream cheese
2 cups Shredded cheddar cheese
salt and pepper to taste

chop the head of cauliflower into pieces...how many is up to you. I usually cut off the stem and chop a few of the pieces a little smaller.
Add two cups of water to a sauce pan or small stock pot. To the water add a little salt and pepper to taste. Peel the garlic cloves and add those and the cauliflower pieces to the water and cover.
Bring to a boil, lower the heat to med-low and cover it.
Check it in about 10-15 minutes, jab it with a fork. Is it tender? If it is, you are ready to mash. If it is not then keep it covered for another 5-10 minutes until tender. Drain.
Now while your cauliflower is cooking, saute the onions until translucent in a little bit of oil or butter. I prefer butter.
After both the cauliflower and the onions are done, transfer them to a bowl. Commence the mashing! This can be done with a potato masher or a fork. Add onions and cream cheese and mix well with whatever you used to mash the cauliflower.
Transfer to a casserole dish or any other oven friendly dish you may have,
sprinkle the cheese on top evenly and cook at 350 degrees for about 20 minutes.
